They are not meaningfully physically different than reproductively active centaurs, the hierarchy is mostly socially enforced. Female centaurs have a very slow estrus cycle by default, and are only actually capable of becoming pregnant about once a year, when they grow long maternal feathers on their rump. Getting pregnant routinely speeds that cycle up to several times a year.
Centaurs in the worker group who get pregnant tend to either be ousted from the clan to start their own (can be done on purpose with the blessing of the matriarch), or cull their young shortly after birth (if they didn’t get permission, they’d probably be expected to do this). Depending on local custom, larva are generally not considered people and culling is acceptable until after pupation, or until after they start speaking at around 7-8 months. The matriarch may also “prune” their litters in case of undesired pregnancy or lower population capacity in their clan. From a human perspective this probably sounds rather brutal, but when you have six kids at a time, pregnancies are so short they might go unnoticed until birth, and the 3 inch long pink jellybeans all grow up to be ~700 kilo apex predators, well…

Sure. It’s like making a cake in the shape of a bowl of fruit though. Imitation with different ingredients has its limits.
